Step 1. Place the quinoa in a saucepan along with 1 cup of cold water, almond milk, cinnamon, honey and a small pinch of salt. Place over a medium heat and bring up to a simmer. Cook the porridge, stirring occasionally for 12-14 minutes, or until most of the liquid has absorbed and the quinoa is soft.
Step 2. Remove porridge from the heat and divide into serving bowls.
Step 3. Dollop over the yoghurt and top with the sliced blueberries, pistachio and extra honey. Enjoy!
